Potato and Mutton Patties

Hello my reader, after long time I am back to my blog and ready to share with you  many new posts, as usual about each and everything. I hope you have missed me here, soon I will start regular updates as it was before, but as of now lets come back to the recipes, which I have promised to share long time ago. Sorry for long delay, I have been very busy those days. However I missed my blog so much that decided to find time and write down all those crazy thoughts,  which are there in my mind.
As you remember I have promised to share with you potato and meat patty recipe. This is my husband's favorite snack and I use to bake it often. So let's go for it.

Ingredients for dough:
  1.  2 tablespoon of yeast
  2. one cup of lukewarm milk
  3. one tea spoon of salt
  4. punch of sugar
  5. half class of water
  6. 700 gram of flour

Process:
First we mix yeast in milk and sugar, then we close it and leave it for 10 minutes.

After 10 minutes we add salt, then flour and knead the dough. When the dough is ready, close it and leave in warm place for one hour.

During this time we can start preparation for fillings.
Here I will take potatoes for people who prefer vegetarian patties and minced mutton (you can take any other meat as well)  for non-vegetarian.
First lets prepare potato fillings. For this I will take:
  1. 5 medium potatoes
  2. punch of coriander (chopped)
  3. one small chopped onion
  4. red chili powder (by taste)
  5. black pepper powder (by taste)
  6. salt (by taste)
First I will boil potatoes, and when it's deep boiled I will mash it and then add all above mentioned ingredients.

For non vegetarian filling I will need:
  1. one medium onion (chopped)
  2. 500 gram minced mutton
  3. punch of coriander (in my case I  did not used,)
  4. red chilli powder (by taste)
  5. black pepper powder (by taste)
  6. 2 tablespoon of oil
  7. 0,7 teaspoon of salt (ether by taste)

Pour oil into the frying pan, wait for few minutes and then add onion. Fry for around 8 minutes in normal flame and then add minced mutton.

Close the lid and leave on slow flame till water will be coming out from meat. Then add the salt, mix and again close the lid. If the meat is kind of dry you can add 1/3 cup of boiled water. However, most of the time it will not be necessary, since meat will bring out its own fluid. In my case it has taken 40 minutes till meat was cooked, and fluid was gone. But before taking it out from the flame add pepper powders, then closed the lid, wait for 5 minutes and then only close the flame.
So now both of our fillings are ready, lets leave them a side and come back to the dough.

If dough is doubled by volume,  we divide it into 4 equal balls, cover and wait more 40 minutes. Then take the one and open with rolling pin.

The thickness of the dough should be 3- 4 mm, and shape would be oval or round.
Then we divide it to four parts and on the top of every part will put the filling accordingly.

We need to take other corner of the dough and gently cover the filling by connecting two ridges of slides, remove additional dough and then  give a shape.

Fry it in hot oil, on normal flame from both sides.

Oil should be enough, for patties to get well cooked.

After taking out from the pan you can remove extra oil from patties by putting in on tissue paper. Our patties are ready.

Enjoy it with sauce or ketchup.

My Vegetarian and Non Vegetarian Sandwiches

Hello my reader, today I am back to my kitchen and ready to share  my favorite sandwich recipe with you. This sandwiches are good for breakfast,  and can be for vegetarians and non vegetarians, this all depends on ingredients we use.
So today I will make both of it, and let me say this is one of the way which I do make sandwiches, there are also few different ways, which I will share with you later.

Ingredients :

  1. Sliced bread
  2. cheese slice
  3. one cucumber
  4. two tomatoes
  5. one capsicum
  6. one onion
  7. bunch of coriander
  8. salami (in case if you want to try non vegetarian version)
  9. ketchup (by taste)
  10. mustard (by taste )
  11. black pepper (by taste)

Before we start process we gently wash all the vegetables, slice them.

Try to make slices as thin as possible (in my case it's not so thin), no need to chop coriander.
If you are going to use cheese as an ingredient, it's better to avoid using a butter, but if there is no cheese or mayonnaise, you will need to use just a little butter on top of the bread, since the bread will become a dry.
In my case I am using cheese slices and I dont need extra fat, so I will not use butter.
So lets take one slice of bread and start putting vegetable  slices one by one (or salami, in case of non vegetarian sandwiches) on the top of bread. I will start with cucumber. then tomato, capsicum, onion, coriander. You can also add black pepper.

On the top I will put cheese slice and then one more slice of bread.

And then shift it to griller, wait for two minutes and  sandwiches are ready. The heat in griller makes bread little crispy but not dry, since we have cheese inside and it start melting and making creamy texture.

The sandwiches come very delicious and nutritious as well, you can add ketchup, mustard and black pepper while eating. I prefer only ketchup, and enjoy it with lemon tea during my breakfast.

I hope you will try to make this yumminess at your home, and soon I will have feedbacks.

Bon Appetit
Wish you all happy Monday

Soup with Mutton Balls

Hi my dear reader, today I am going to share with you long expected recipe of mutton ball soup.
This is my mother recipe, and let me say it was my favorite recipe of all time.

For this recipe we will need:
  1. 400 grams of minced mutton
  2. 4 medium potatoes
  3. 2 medium tomatoes
  4. 1/3 cup of  rice
  5. 1.7 litre of water
  6. one big onion
  7. Salt
  8. Black pepper
  9. punch of coriander
  10. 2 tablespoon ghee (this mutton already had a fat )

Here I will be using already prepared minced mutton which has all the spices, onion, salt, dried greens, little flour, rice and egg inside (all the details,  you can see in my recipe post of Dolma).
Frankly said I add rice on mutton by mistake and was scared that mutton balls will get broken during the boiling process, but actually nothing happened and it was really tasty.
First of all we need to chop all vegetables and coriander as well, then fry onion in ghee for 5 minutes and add tomatoes as well.

Then we pour the water in pan, wait for few minutes till water will be warm and shift mutton balls into saucepan.

Add salt, make flame slow, close the lid and wait until meat is half cooked and then add rice and after few minutes potato. When potato and rice are cooked, switch off the flame and add chopped coriander and black pepper.

Mutton ball soup is ready...Bon appetit.

Armenian Dolma Recipe

Hi guys, it has been long time that I have  promised my instgram followers to share with them recipe of Armenian traditional dish Dolma, but actually could not do it due to my busyness. So the day has come.

Armenian and middle Eastern cuisine, Dolma refers to a family of stuffed vegetables, wrapped with in grape or cabbage leaves, but sometime people use also brinjal, squash, peppers and tomatoes.

Ingredients:

  1. one big head of cabbage
  2. 2 tablespoon of ghee
  3. 1.5 lb of mutton (Basically for dolma we use beef but here I will use mutton)
  4. 1/4 cup of rice
  5. 1 large onion
  6. 2 tablespoons of each (basil, coriander, parsley chopped)
  7. Few bay leaves
  8. one egg
  9. 2 spoon of flour
  10. 3 tomatoes
  11. ground black pepper
  12. Salt
Process:
Trim away the thick stalks from the cabbage leaves and then put them into the simmering salted water for 5 minutes then gently remove from the water and keep aside to cool.
In a large bowl combine rice, mutton, flour, onion, egg black pepper, red chilli pepper. salt (by taste, approximately one teaspoon) and greens (basil, coriander parsley). Mix it well.

Then take one leaf, put 2 tablespoon of mutton mixture, fold the sides of the leaf over the filling to cover, then tightly roll the leaf.

Take the pan and put few cabbage leaves and tomato slices on the down side, and then gently transfer stuffed cabbage rolls.

On the top put few tomato slices, bay leaves and ghee.

Then add a water into the pan, little salt ( it does not need to be covered with water, just little less). Cover with lid and put on slow flame for one hour.
During the time you can taste the juice part and see if the salt is enough, otherwise you can add it more. When the meat and cabbage are cooked your Dolma would be ready.

Bon appetit...
