Armenian Dolma Recipe


Hi guys, it has been long time that I have  promised my instgram followers to share with them recipe of Armenian traditional dish Dolma, but actually could not do it due to my busyness. So the day has come.

Armenian and middle Eastern cuisine, Dolma refers to a family of stuffed vegetables, wrapped with in grape or cabbage leaves, but sometime people use also brinjal, squash, peppers and tomatoes.

Ingredients:



  1. one big head of cabbage
  2. 2 tablespoon of ghee 
  3. 1.5 lb of mutton (Basically for dolma we use beef but here I will use mutton)
  4. 1/4 cup of rice 
  5. 1 large onion 
  6. 2 tablespoons of each (basil, coriander, parsley chopped)
  7. Few bay leaves
  8. one egg
  9. 2 spoon of flour 
  10. 3 tomatoes 
  11. ground black pepper 
  12. Salt 
Process:
Trim away the thick stalks from the cabbage leaves and then put them into the simmering salted water for 5 minutes then gently remove from the water and keep aside to cool.
In a large bowl combine rice, mutton, flour, onion, egg black pepper, red chilli pepper. salt (by taste, approximately one teaspoon) and greens (basil, coriander parsley). Mix it well.



Then take one leaf, put 2 tablespoon of mutton mixture, fold the sides of the leaf over the filling to cover, then tightly roll the leaf.


Take the pan and put few cabbage leaves and tomato slices on the down side, and then gently transfer stuffed cabbage rolls.


On the top put few tomato slices, bay leaves and ghee.


Then add a water into the pan, little salt ( it does not need to be covered with water, just little less). Cover with lid and put on slow flame for one hour.
During the time you can taste the juice part and see if the salt is enough, otherwise you can add it more. When the meat and cabbage are cooked your Dolma would be ready.

Armenian Easter Tradition

Hello my reader, after celebrating Easter with full enthusiasm, I am back to my blog, for sharing with you a tradition of Armenian Easter celebration. So today I will tell you, how we Armenians are  celebrating Easter? What are the traditional Easter dishes which we cook that day and how different is Armenian Easter tradition from others?

 Easter, also called Pascha Resurrection Sunday is a festival and Holiday celebrating resurrection of Jesus from the dead, described as having occurred on the third day of his burial after his crucifixion.
Easter and holidays that are related to it are moveable feasts, which do not fall in a fixed date in the Gregorian and  Julian calendars, which follow only the cycle of the sun, rather its date is determined on a lunisolar calendar similar to the Hebrew calendar.  So it has come to be the first Sunday, after the ecclesiastical full moon that occurs on or after 21st of March. Easter customs are vary across the Christian world and that is regarded to traditional Easter food as well.




   

The Armenian Apostolic church celebrates Easter according to the Gregorian calendar. This holiday is one of the five major feasts of the Armenian church and its called "Zatik" which means "relief from suffering".
(Just to remind )Armenian is  the oldest Christian country in the world, accepting Christianity as an Official religion in 301 AD.

  Armenia has got its own traditions for Easter Celebration.The festival starts from Saturday evening, when people go to the churches and bring lights and willow branches to the home. The church blesses this branches and you need to keep it till next Easter and then replace them with new one. Then its starts the preparation for traditional foods.

 As in every Christian culture we also color the eggs. Eggs symbolize the empty tomb, and red is a color of the sun, but some says its symbolise blood of Jesus. The part of  traditional Easter dishes come also  rice pulav with raisins, which symbolises people and faith, raw and cooked greens, has the meaning of new life, Easter cake with white frosting, symbolises purity, fish, (some believe that it has been used by early Christians ) red wine, which symbolises Jesus blood, Armenian lavash.
 Before in Armenia Easter eggs were dyed red using the traditional method of immersing them in an infusion of red onion skins, but nowadays there are many other ways and colors  to decorate Easter Eggs.

 In Armenian Easter the most enjoyable moment is egg-tapping, when one holds the egg in hand and the second person taps their egg. If you crack the other person's eggshells first without breaking your own, you win and get their egg. You  keep doing this until the person with the most eggs wins.
This is how we celebrate Easter in Armenia. I believe every country has it own tradition for celebration but overall its a happy and colorful festival, and here it is the way we celebrated it in Delhi with friends.

Homemade Skin Scrub with Semolina powder and Yogurt

Hello world, today I woke up with a mood of doing something good to my body. Yoga I basically do on the mornings  ( even though I am not so professional on it), then I was thinking what can I do more for myself. And I found the answer... this day I will dedicate to my beauty and skin care.
 Let it be a day free of make up, free of cosmetics, just natural. And I will make very simple natural face scrub, which will try on my  face. I am sure everyone of you can make this scrub at your home, since it contains  only two ingredients, which are always there in your kitchen. So let's start the process.



Ingredients:
  1. 1 tablespoon semolina powder (Sooji/ Rawa)
  2. 1 tablespoon yogurt or sour cream 
To find a sour cream in India is a hard task, so I have used part of yogurt, which has a thick consistency. Its basically good if yogurt has been kept in refrigerator, because it will be more creamy and also will refresh your skin.

Process:

We need to mix two ingredients, make a mixture and apply on the face ( skin should be clean from make up and washed ).







After applying gently massage your skin according to face lines. Then leave it  for 15 minutes and  wash with little bit warm water (now in India it's always warm).
Here it is how my skin looks, after this scrub. Since it was more than enough for my face, I have applied also on my hands.


So what effect can give this scrub?
Yogurt contains lactic acid and alpha hydroxy acid which dissolves dead skin cells.
Simple yogurt   applied two times a week will leave you with soft and supple skin. The zinc in yogurt helps to cool sunburns. Yogurt contains natural antibacterial and anti-fungal proportions. If to use it regularly yogurt has a mild bleaching powers that can smooth out discoloration.  The lactic acid in yogurt will help dissolve dead skin and tighten pores.
Semolina (Sooji/ Rawa) powder opens skin pores, remove dirts and eliminates  dead skin cells, blackheads and make the skin more clear and fair.
So, as we see this scrub is very healthful for skin, so I highly recommend of using it, since it does not take a much time, but has a great effect.

Bun filled with Raisins

Hello my reader, today I am going to make a buns, with one special recipe. This will be pure vegan recipe, without egg. I like buns and every time I want to  new recipes and even I can make it with my own fantasy. And of course results are different by taste and by look as well, but let me say this one came very very soft and yummy.


So here it is.


Ingredients:

  1. Milk 300ml
  2. yeast 2 tablespoon 
  3. 100 gram sugar
  4. 1 tablespoon oil
  5. 50 g butter
  6. 3 tablespoon milk for greasing 
  7. 550-600 g flour 
Process:
First of all we need to take a 300 ml of warm milk, add one teaspoon of sugar and then dissolve yeast into it. Leave it for 10 minutes. Once fermentation starts and foam will cover the milk, we can add all other ingredients and mix it well till we get homogenous dough.


I will cover it and put it in warm place. It takes approximately 40 minutes for dough to enlarge around 4 times. However it depends from temperature of environment, how fast fermentation will take.


Then I will knead it little bit and divide into two parts. 



One part I will put back into a bowl, will cover it again and with second part I will start making buns. 
Since in India temperature is very high now, I will not allow dough to rest for more time. But if you live in cold area, after kneading the dough, you can leave it for extra 20 minutes to rise again. 
With half part of the dough I am going to make a role, and then divide it to small balls, later I will open that balls with rolling pin, put raisins inside and roll it back. 




Before baking you can leave it for 20 minutes to rinse more (but actually I have not done it).
Dont forget to grease a butter on the pan before buns will be shifted on it, and also  milk on the top of buns. Bake it in 200 C for 30 minutes.


Here it is, soft and delicious, you can have it with tea, or coffee, or during the breakfast with cup of milk.

Back to the Memories

Hello my reader. It has been long time I have not written anything in my blog. There were lot of things  going on in my life, so I was not able to concentrate on writing a new post for my blog. When my mind is busy with something, I can not work on some other things. So I need to be calm and concentrate to my work properly.

Yesterday was very special day, in Armenia we celebrate it as a Mother's Day. But I personally believe that, even whole calendar is not enough to  dedicate it mothers. They are such a creatures of God, about whom we can talk every day and there will be always something untold.
Mothers are God's gift to us, and even though I am not mother yet, but I am doubt I can be the way my mother is. How they can handle so many things together, take care of the family, spend time with children, cook, clean, wash, and the same time stay as cool as they are, loving and caring. No one else in this world can replace them, and it does not matter how old we are, we become a same child when we are surrounded with our parents. I wish they will live forever.

To understand the role of my mom and how much I need to appreciate her, ( and my father as well) I want to tell you a little story from my childhood.

As I already told in my previous posts, I was born in Armenia, in small town called Martuni.
My father was a teacher of history, and my mom was lecturer in college. I was just 5 years old when Armenia got independence from Soviet Union, and the same time war has started between Armenia and Azerbaijan. During Soviet Union, we had a nice life, even though Soviet had its own problems, but my parents use to travel a lot, and bring us things which were "prohibited" in my city (like Papsi Cola- in that time it was called like this). However scene was changed  after collapse of Soviet Union. Situation in Armenia has become very critical. From one side there was a war, from other side we had a collapsed economy, no army, no constitution. Newly formed country, without anything on the hand.

As every Armenian family, my family also faced lot of problems. I was the youngest child of my family, but my sisters were teenage. They were need much more things than I would require.

My mother started to work in two places: in college and in factory.
I still remember the smell of that candles, in which lights she was doing all her accounting job, on that big and thick notebooks. And there was no calculator in that time. She was using one hand made wooden "something" with which she was doing her calculations (that "something" still exist at my home). At the same time,  taking care of us. Electricity was only for one hour, and in that one hour she was cooking, washing. Even water we were nerd to bring from outside, and with buckets take it to fourth floor. During the winter it became very hard, since temperature got down till -30. But Armenian mothers are the most "warrior" creatures, they never give up. My mom and dad have done everything for us to make our life easy, of course we also help them in home works and agriculture.

After sometime we got a land in my father's village. And yeah I was the one, with my small hands who was taking out stones from soil and putting it to the bucket, which my father was taking away, and with this way we made that land useful for agriculture, and started to grow potatoes. My sisters where elder than me, and they were doing much more difficult works than I did.

And now, when I look back to my past, I can say: " yes I have done all the agricultural works in my childhood and teenage time, but  from all of them, climbing the tree was most enjoyable".
The role of my mom did not finish with her physical help and support to us, with all that struggle she was the same loving and kind woman, on whose arms we were taking our sleeps. There is no more peaceful place in this world than being a near to your parents.
 Agricultural work was hard for whole my family, because it requiers lot of physical afford, so we could only relax in winter, when everything was covered with snow. however winter brought other problems, like water and heating.
Central heating system has gone with Soviet Union and everyone was responsible for their own home. In that time every home had kind of stove, which was used for cooking and heating as well.We were putting potato slices on the top of stove, and I was the one who was granted with most crispy slices. No any food can replace to the taste of that potatoes, which till now I remember.
Problems were a lot, but overall I had a happy childhood: surrounded with my parents and sisters love.

And this is how my generation has grown up. Now many things are changed in Armenia, and in my city as well. But my parents love has never been changed.
When I was teenage, sometimes I felt irritated when my mom was forcing me to eat more, always care jacket with me, but now I wish to be near her and eat whatever is cooked by her hand.

Always appreciate the time you spend with your parents at your home, you never know where you will be tomorrow and how you will miss that time and feeling of being princess of your parents.Those are the moments which are going to be the most sweet memories, when the time will come. You will wish to give everything, but instead to be near to your parents, but life is not so easy. 
Give your love and take their love as much as you can, since those are the people who has created your life, and no one else in this world will love you more than they do.
